Effects of Dietary Phytic Acid on the Lipid and Mineral Profiles in Rats

Abstract

|
The feeding effects of phytic acid on mineral and lipid profiles in serum and liver of rats were investigated. Male SD rats were fed on the purified diets rich in 0.2% cholesterol supplemented with 0.5 (P0.5), 1.0 (P1.0), or 2.0% (P2.0) sodium phytate for four weeks. One gram of sodium phytate is equivalent to 0.7 g of phytic acid. Feeding of phytic acid decreased the content of liver iron, whereas it increased serum total iron binding capacity (TIBC) in P0.5 group. The concentration of liver cholesterol was significantly higher in the P0.5 and P2.0 groups without affecting lipid profiles in serum. There was a significant increase in fecal bile acids in the groups fed with physic acid. The concentration of serum glucose was markedly lower in the P2.0 group than in other groups. The results suggest that phytic acid intake of 0.35¡1.4% of diet may affect the metabolism of glucose, cholesterol and iron in rats that fed with cholesterolemic diet.
